Buffalo Kabobs Recipe
- 2 x (7-10 ounce) Buffalo Top Sirloin Steaks
- 1/3 c. lemon juice
- 1/4 c. veg. oil
- 1/4 c. Worcestershire sauce
- 1 Tbsp. honey
- 1 1/2 tsp snipped fresh basil
- 1 1/2 tsp snipped fresh thyme
- 1/8 tsp garlic salt
- 1 med onion, cut into 8 wedges
- 1 sm zucchini, sliced 1/2 inch thick
- 1 med red and orange sweet pepper, cut into 1 inch pcs
- Thinly slice top sirloin steaks into 1/4-inch thick strips.
- For marinade, combine lemon juice, oil, Worcestershire sauce, honey, basil, thyme, garlic salt, and 1/4 tsp.
- pepper.
- Pour half the marinade over the meat and chill 3-4 hrs.
- Refrigerateremaining marinade.
- Meanwhile, in a saucepan cook onion, covered, in a small amount of boiling water for 3 min.
- Add in zucchini and cook 2 min more; drain.
- Drain meat, throw away marinade.
- Thread meat and vegetables on metal skewers, leaving 1/4 inch between pcs.
- Grill uncovered directly over medium coals 10-12 min, turning once; brush often with chilled marinade.
- Makes 4 servings.
