Spinach Salad

  1. Fry bacon; reserve fat.
  2. Tear bacon into 1-inch pieces.
  3. Wash and tear the spinach into bite size pieces.
  4. Add bacon, chopped eggs, diced onion, shredded Swiss cheese and garlic croutons. Blend remaining ingredients together for a dressing.
  5. Best if dressing is made and refrigerated a day in advance.
  6. When ready to serve, drizzle 3 tablespoons bacon fat on spinach.
  7. Add dressing and toss.
