Spinach Salad
- 8 slices bacon
- 1/2 lb. fresh spinach
- 4 hard-cooked eggs
- 3 green onions
- 1/2 c. shredded Swiss cheese
- 1/2 c. garlic croutons
- 1/2 c. mayonnaise
- 3 Tbsp. plain yogurt
- 3 Tbsp. lemon juice
- 1 1/2 tsp. prepared mustard
- 1/4 tsp. ground nutmeg
- salt and pepper to taste
- Fry bacon; reserve fat.
- Tear bacon into 1-inch pieces.
- Wash and tear the spinach into bite size pieces.
- Add bacon, chopped eggs, diced onion, shredded Swiss cheese and garlic croutons. Blend remaining ingredients together for a dressing.
- Best if dressing is made and refrigerated a day in advance.
- When ready to serve, drizzle 3 tablespoons bacon fat on spinach.
- Add dressing and toss.
