Tomato Jam
- 4 large tomatoes
- 1 small onion
- 3 garlic cloves
- 1 14 cups sugar
- 1 teaspoon salt
- 12 teaspoon pepper
- 2 whole cloves
- 1 pinch ground cinnamon
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1 tablespoon red chili pepper flakes
- Peel and de-seed tomatoes.
- Chop onions and garlic and cook them over medium heat in a bit of oil.
- Add chopped tomatoes and remaining ingredients.
- Bring to boil, reduce to simmer until thickened, about 45 minutes.
