Jrods Spanish Rice
- vegetable oil (enough to cover bottom of pan)
- 1 medium onion (cut in half)
- 2 cups white rice
- 4 cups water
- 1 (8 ounce) can tomato sauce
- 4 teaspoons chicken bouillon powder
- Heat oil in a medium sized pan.
- put onion in oil, let fry for about 3 minutes.
- add rice and let rice brown for about 10 minutes (stir every 2 minutes).
- once rice is brown, add the water, tomato sauce and bouillon.
- bring to a boil.
- once it is boiling, turn heat to low.
- cover and let cook until water is absorbed.
- after water is gone, turn off heat and leave cover on.
- let rice sit for about 30 minutes, do not open lid until the rice has sat for 30 minutes.
- serve and enjoy.
