Croque Madame
- 4 slice of white sandwich bread
- 150 grams sharp cheddar cheese, sliced
- 8 slice wafer thin ham
- 2 tbsp butter
- 2 tbsp vegetable oil
- 1 cup bechamel (white) sauce
- 2 large eggs
- 1 pinch salt and black pepper
- Divide the cheese slices onto the bread, followed by the ham (4 slices on each) and make into two sandwiches
- Melt the butter in a large saute pan with 1 tablespoon of the oil, and when bubbling add the sandwiches.
- Fry both sides until browned, but don't let the butter burn
- Heat the other tablespoon of oil in a small saute pan and crack in the eggs.
- Fry to your liking.
- Put the sandwiches on plates, smother with bechamel.
- Top your sandwich with your fried egg, sprinkle with salt and pepper.
