Minestrone (Cabbage) Soup Recipe
- 2 quart. boiling water
- 3 cubes beef bouillon
- 2 onions, diced
- 1/2 head cabbage, shredded
- 1 (1 lb.) can of tomatoes
- 3 to 4 carrots, sliced
- 1/2 teaspoon oregano
- 1 tbsp. chopped parsley
- Salt and pepper to taste
- Step 1: Simmer all ingredients in large pot, covered, for 3 hrs.
- Step 2: Serve plain or possibly with grated Parmesan cheese on top.
