World best Biryani
- 3 bay leaf
- 5 ground cloves
- 2 cinnamon
- 1 star anise
- 1 nutmeg
- 4 dried red chilly
- 2 mace
- 8 onions (sliced)
- 6 clove garlic (chopped)
- 1 kg lamb meat
- 2 cup rice
- 2 black cardamom
- 5 green cardamom
- 3 whole red dried chili
- pinch turmeric
- 1/2 tbsp cayenne pepper
- 5 cup water
- 2 tbsp ground coriander
- 3 tbsp meat masala/ biryani masala
- 1/2 tbsp red chili powder
- 8 tbsp clarified butter (ghee)
- 2 onion, chopped (deep fried)
- 10 cashew nuts (deep fried)
- dash fresh coriander
- Cook meat in a pressure cooker with some water.
- Just add salt and turmeric to it.
- Let it be on flame till 12-14 whistles.
- Drain meat.
- Reserve stock.
- Add 4 cups of stock to rice and par boil.
- In a pan add clarified butter.
- Add bay leaf, clove, pepper, star anise, nutmeg, cinnamon, mace, black cardamom, green cardamom, 3 whole red dry chillies and fry till fragrant.
- Add garlic and onions to the pan.
- Saute till soft.
- Add cooked meat and cook for another 5 minutes.
- Add salt, coriander powder, yogurt, cayenne pepper, red chili powder, meat masala/biryani masala.
- Add par boiled rice to the pan, mix and cover with a lid.
- Keep on low flame.
- Cook for 10 minutes.
- Garnish with some fried onions, fried cashew nuts and fresh coriander.
- Enjoy!
