Slow Cooker Beef Bourguignon
- cooking spray
- 2 lbs stewing beef
- 1 large carrot, sliced
- 1 medium onion, sliced
- 3 tablespoons flour
- 2 cups beef stock
- 1 tablespoon tomato paste
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried tarragon
- 1 bay leaf
- 12 lb white pearl onion, peeled
- 1 lb mushroom, sliced
- 12 cup dry red wine
- Spay skillet with cooking spray.
- Add beef, carrot and onion; cook until beef is browned.
- Add flour and cook 1-2 minutes.
- Stir in beef stock and heat to boiling.
- Transfer to slow cooker.
- Add remaining ingredients, except mushrooms and wine.
- Cover and cook on low 8-10 hours.
- Add mushrooms and wine during the last hour of cooking.
- Discard bay leaf.
