Light Creamy Chicken and Broccoli Pasta
- 8 ounces fettuccine pasta or 8 ounces any other pastas
- 1 tablespoon butter
- 1 lb ground chicken
- 1 medium white onion, thinly sliced
- 2 cups broccoli, chopped
- 1 cup light sour cream
- 4 green onions, thinly sliced
- 12 teaspoon poultry seasoning
- 14 teaspoon nutmeg
- 12 cup parmesan cheese
- Bring a large pot of salted water to a rolling boil, add pasta, boil, stirring often, for about 4 minutes.
- Add Broccoli to boiling pasta, and cook another 4 minutes, or until pasta is soft, and broccoli is tender-crisp.
- Meanwhile, melt the butter in a large frying pan, over medium heat.
- Add onion, saute 4 minutes.
- Crumble chicken into pan.
- Cook, stirring often, until no longer pink, 4-5 minutes.
- Add the sour cream, green onions and seasonings and stir until hot.
- Drain pasta, toss with sauce and sprinkle with parmesan cheese.
