Simple Radish Toasts
- 1 stick Butter, Room Temperature
- 8 slices Italian Bread
- 12 whole Radishes
- 13 cups Fresh Scallions
- 13 cups Fresh Parsley
- Salt And Pepper
- Set butter out to soften.
- Put the slices of bread on a baking sheet and turn on your broiler.
- Put the pan into the oven and toast the bread.
- Remove it from the oven and allow to cool completely.
- Wash radishes, chop off top and bottom.
- Slice them thinly and lay them on a platter in a single layer, sprinkling them lightly with salt.
- Chop the scallions and parsley.
- In a medium-sized bowl mix together the (softened) butter, scallions and parsley.
- Add salt and pepper to taste.
- Spread toast slices with the butter/herb mixture, and top with a layer of radishes.
