Roasted Garlic and Balsamic Dipping Oil

  1. To roast garlic, cut the top 1/2 inch or so off each head, drizzle some regular olive oil over top and add a pinch or two of salt and pepper.
  2. Wrap all four in a piece of aluminum foil and bake at 400 degrees F for about 45 minutes.
  3. Smear about 2-3 Tablespoons of the roasted garlic on a shallow dish (you can just squeeze the heads to remove the roasted goodness inside).
  4. Drizzle about 1/2 cup of olive oil and about 2 Tablespoons of vinegar over top.
  5. The quantities of the garlic, oil, and vinegar will vary according to your taste feel free to play with the ratios.
  6. Add more of any, if necessary.
  7. Throw a pinch or two of salt and pepper over top and have at it, dipping pieces of the bread in.
