Roasted Garlic and Balsamic Dipping Oil
- 4 whole Heads Of Garlic
- 2 Tablespoons Regular Olive Oil Or Other Heat-safe Oil
- 1 cup Good Quality Extra Virgin Olive Oil (use As Much Or Little As You Like)
- 13 cups Balsamic Vinegar (use As Much Or Little As You Like)
- 1 dash Salt And Pepper
- 1 whole Large Loaf Of Crusty Bread
- To roast garlic, cut the top 1/2 inch or so off each head, drizzle some regular olive oil over top and add a pinch or two of salt and pepper.
- Wrap all four in a piece of aluminum foil and bake at 400 degrees F for about 45 minutes.
- Smear about 2-3 Tablespoons of the roasted garlic on a shallow dish (you can just squeeze the heads to remove the roasted goodness inside).
- Drizzle about 1/2 cup of olive oil and about 2 Tablespoons of vinegar over top.
- The quantities of the garlic, oil, and vinegar will vary according to your taste feel free to play with the ratios.
- Add more of any, if necessary.
- Throw a pinch or two of salt and pepper over top and have at it, dipping pieces of the bread in.
