Copycat Zuppa Toscana
- 1 lb hot Italian sausage
- 12 lb bacon
- 1 medium onion (diced)
- 2 tablespoons garlic (minced)
- 4 russet potatoes (halved and sliced)
- 4 cups water
- 2 tablespoons chicken soup base
- 34 cup milk
- 12 bunch kale
- In a large pot crisp bacon, remove from pan and set aside.
- Add hot italian sausage to pan and brown and crumble
- Remove excess fat from pot and add onion and garlic.
- Crumble bacon then add to pot.
- Cook til onions are translucent.
- Add water, chicken soup base, and potatoes
- Cover and simmer til potatoes are fork tender
- Uncover and add milk and kale.
- Cook til kale is tender.
- ENJOY.
