Macrobiotic: Sweet Potato Soup

  1. Chop the onion into chunks and stir-fry with some oil until translucent.
  2. For the sweet potatoes, peel them and chop into cubes.
  3. Pour some hot water into the pan from Step 1 and add the potatoes.
  4. Boil until soft.
  5. Once the potatoes have boiled, it's ideal if the water has boiled away too.
  6. Leave the potatoes to cool and add the soy milk (or milk) and white miso.
  7. Mix with a hand mixer or food processor until smooth.
  8. Adjust the flavour of the soup with salt and pepper.
  9. Adjust the thickness with water or soy milk.
  10. When you want to enjoy it cold, add the salt and pepper before cooling.
  11. Top with a sprinkling of spring onion.
