Baked Cod Provencal

  1. Preheat oven to 450F (230C).
  2. Arrange fillets in 8x8x2 inch square baking dish.
  3. Saute onion and garlic in oil in medium-size skillet over medium heat 3 to 5 minutes or until lightly softened.
  4. Add tomatoes, capers, basil, olives, lemon juice, oregano, salt if using, and pepper.
  5. Simmer, stirring occasionally, 8 minutes.
  6. Spoon sauce over fish.
  7. Bake in preheated 450 degree F oven for 10 minutes or until cooked through.
