Jumpin' Jambalaya

  1. Heat butter & oil.
  2. Saute onions until limp.
  3. Add pepper & garlic.
  4. Stir 2 minutes.
  5. Add rice & stir till rice is opaque.
  6. Add remaining ingredients EXCEPT oysters.
  7. Cover & bake at 350F for 35 minutes or until rice is plump & liquid has been absorbed.
  8. Add oysters & let steam 10 minutes more.
