Chocolate Cheesecake
- 1 (16 ounce) box chocolate wafer cookies (thin)
- 34 cup butter (melted)
- 14 teaspoon ground cinnamon
- 1 (12 ounce) package semi-sweet chocolate chips
- 2 lbs cream cheese (softened)
- 2 cups sugar
- 4 eggs
- 1 tablespoon cocoa
- 2 teaspoons vanilla
- 2 cups sour cream
- Crush wafer cookies.
- Combine wafers with butter and cinnamon.
- Press into bottom and sides of 10" spring-form pan.
- Chill.
- Melt semi-sweet chocolate chips.
- Beat softened cream cheese in large bowl until fluffy and smooth.
- Gradually beat in sugar.
- Beat in eggs, one at a time, beating after each addition.
- Add melted chocolate, cocoa, and flavorings.
- Blend thoroughly.
- Stir in sour cream.
- Pour into chilled crust.
- Bake at 350 for 1 hour and 10 minutes.
- Cake will be slightly runny, but will firm as it chills.
- Cool at room temperature.
- Chill at least 5 hours before serving.
