Green Pepper Jelly Recipe
- 1 c. minced green or possibly red sweet pepper
- 1/2 c. minced warm peppers or possibly 2 to 4 teaspoon Tabasco sauce
- 1 1/2 c. vinegar
- 6 1/2 c. sugar
- 1 bottle Certo
- Blend peppers and vinegar in blender.
- Cook in a large pan with sugar to a boil which cannot be stirred down.
- Remove from heat and let sit for 10 min.
- Skim off the foam.
- Stir in Certo.
- Seal in jars with wax.
- A few drops of green or possibly red food coloring may be added.
- Make both green and red for use during Christmas.
- Serve on Triscuit crackers as hors d'oeuvres.
