Mediterranean Orzo Salad
- 8 ounces orzo pasta
- 1 cup grape tomatoes
- 1 cup feta cheese, crumbled
- 13 cup chopped green onion
- 12 cup chopped seeded cucumber
- 12 cup pine nuts, toasted
- 12 cup mint leaf, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 14 teaspoon salt (to taste)
- Prepare orzo according to package directions.
- Drain well.
- Toss with a little olive oil to coat lightly.
- Let cool.
- When pasta has completely cooled, combine all ingredients, except tomatoes, in a large bowl and stir to coat well.
- Add tomatoes.
- Refridgerate several hours or overnight.
