Mediterranean Orzo Salad

  1. Prepare orzo according to package directions.
  2. Drain well.
  3. Toss with a little olive oil to coat lightly.
  4. Let cool.
  5. When pasta has completely cooled, combine all ingredients, except tomatoes, in a large bowl and stir to coat well.
  6. Add tomatoes.
  7. Refridgerate several hours or overnight.
