Bacon, Lime-Infused Watermelon, and Arugula Sandwiches
- 1 block (about 6x2 Inches In Size) Watermelon
- 1/2 whole Lime, Juiced
- 2 strips Bacon
- 1/4 cups Arugula
- 2 slices Bread, Lightly Toasted
- Place the block of watermelon, with no rind, in a medium bowl, and pour the lime juice over the top.
- Let sit and marinate.
- I like to let it marinate for about 1 hour.
- Meanwhile, place the bacon in a nonstick skillet over high heat.
- Turning often, cook the bacon until the fat begins to pop, about 2 minutes.
- Turn the heat down to medium and cook, still turning often, until the fat has rendered from the bacon.
- Finally, turn the heat up to high once again and cook the bacon just until it reaches the color you like.
- Place the strips of bacon on a plate covered with a double layer of paper towels and let drain.
- Place the watermelon, drained bacon, and arugula between the two slices of bread.
- Enjoy!
