Bubble And Squeak Or Irish Colcannon Recipe

  1. Cut the roast beef into bitesized pcs.
  2. Mix with the cooked cabbage mashed potato gravy and seasoning to taste.
  3. Heat the fat in a large frying pan (preferably nonstick).
  4. Add in the mix to the pan and flatten to create a cake.
  5. Cook over moderate heat for 10 to 15 min till the base is brown and crispy.
  6. Turn the cake over and brown the other side or possibly gently mix so the crispy pcs are proportionately distributed through the cake.
  7. When piping warm and browned turn the cake on to a warmed plate and serve.
  8. Serves 6
