Bubble And Squeak Or Irish Colcannon Recipe
- 280 gm cooked roast beef
- 455 gm cooked cabbage shredded or possibly minced
- 680 gm cool mashed potato
- 60 ml gravy
- 1 x salt and pepper
- 30 gm dripping or possibly white fat
- Cut the roast beef into bitesized pcs.
- Mix with the cooked cabbage mashed potato gravy and seasoning to taste.
- Heat the fat in a large frying pan (preferably nonstick).
- Add in the mix to the pan and flatten to create a cake.
- Cook over moderate heat for 10 to 15 min till the base is brown and crispy.
- Turn the cake over and brown the other side or possibly gently mix so the crispy pcs are proportionately distributed through the cake.
- When piping warm and browned turn the cake on to a warmed plate and serve.
- Serves 6
