Raspberry-Lemon Parfait
- 1 pkg. JELL-O Lemon Flavor Sugar Free Gelatin
- 1-1/2 gal. Hot water (160 degrees F to 180 degrees F), divided
- 384 each raspberries
- 1 pkg. JELL-O Raspberry Flavor Sugar Free Gelatin
- 2 qt. plain nonfat Greek-style yogurt
- Dissolve lemon gelatin in 1 gal.
- hot water (or in 1 qt.
- hot water for trial recipe).
- Pour 2 oz.
- gelatin into each of 64 (5-oz.)
- parfait glasses (or into each of 16 5-oz.
- parfait glasses for trial recipe).
- Add 5 raspberries to gelatin in each glass.
- Refrigerate until gelatin is set but not firm.
- Dissolve raspberry gelatin in remaining 2 qt.
- hot water (or in remaining 2 cups hot water for trial recipe).
- Whisk in yogurt.
- Pour 2 oz.
- over lemon gelatin layer in each glass.
- Refrigerate until firm.
- Top each parfait with 1 of the remaining raspberries before serving.
