Raspberry-Lemon Parfait

  1. Dissolve lemon gelatin in 1 gal.
  2. hot water (or in 1 qt.
  3. hot water for trial recipe).
  4. Pour 2 oz.
  5. gelatin into each of 64 (5-oz.)
  6. parfait glasses (or into each of 16 5-oz.
  7. parfait glasses for trial recipe).
  8. Add 5 raspberries to gelatin in each glass.
  9. Refrigerate until gelatin is set but not firm.
  10. Dissolve raspberry gelatin in remaining 2 qt.
  11. hot water (or in remaining 2 cups hot water for trial recipe).
  12. Whisk in yogurt.
  13. Pour 2 oz.
  14. over lemon gelatin layer in each glass.
  15. Refrigerate until firm.
  16. Top each parfait with 1 of the remaining raspberries before serving.
