Caramel Oatmeal Cookies Small Batch Recipe
- 2 Tbsp. unsalted butter room temperature
- 1/3 c. light brown sugar
- 3 Tbsp. buttermilk
- 1/8 tsp vanilla extract rounded, do not skimp
- 1 pch salt
- 1/8 tsp grnd cinnamon
- 1 tsp egg white pwdr (Just Whites)
- 1/2 c. reduced fat Bisquick
- 1/3 c. rolled oats
- 1/4 c. minced walnuts
- 1/4 c. soft raisins

- Preheat oven to 350F.
- 2.
- With hand mixer: In a large bowl, cream together the shortening and sugar till light and fluffy.
- Add in the vanilla and buttermilk.
- Whip to combine.
- Add in healthy pinch of salt, cinnamon and egg white pwdr.
- Whip just to combine.

- By hand: Add in Bisquick and oats to the butter mix.
- Stir to combine.
- Add in nuts and raisins.
- Stir to combine.
- Drop by rounded spoonfuls onto nonstick cookie sheet.
- (12 to 14 cookies).

- Bake for 10 to 12 min in the preheated oven till golden brown dry.
- Allow cookies to cold on baking sheet for 5 min before removing to a wire rack to cold completely.
