Mixed Bean Gumbo Recipe

  1. Place flour in a no-stick frying pan.
  2. Cook over medium-high heat stirring constantly to roast flour.
  3. Continue stirring till the flour is medium brown.
  4. Remove the pan from heat and pour in 2/3 c. stock.
  5. Whisk till smooth.
  6. Transfer the flour mix to a large soup pot.
  7. Add in the boiling stock, pepper, celery, onions, tomatoes, garlic, bay leaves, and thyme.
  8. Bring to a boil, then reduce heat to simmer.
  9. Add in beans and simmer about 30 min.
  10. NOTE: For broth use 4 beef bouillon cubes in 3 c. water.
  11. This is a delicious soup and has no fat.
