Baked Acorn Squash with Pine Nuts and Garlic Recipe
- 2 small acorn squash (about 2 lbs)
- 1 tablespoon olive oil
- 1/4 tsp salt
- 8 cloves garlic, halved
- 1 tablespoon pine nuts
- 1/4 tsp freshly ground pepper
- Preheat oven to 400 degrees.
- Coat shallow baking dish (or cookie sheet) with cooking spray.
- Cut squash crosswise into rings 1/2 inch thick.
- Place the rings in baking dish in a single shallow layer, overlapping slightly.
- Brush with oilve oil.
- Bake for 15 minutes.
- Meanwhile, in a small bowl, toss garlic and pine nuts with remaining olive oil.
- Sprinkle pine nuts and garlic evenly over the squash rings and continue baking until pine nuts are lightly browned (or squash looks done), 10-15 min.
