Baked Acorn Squash with Pine Nuts and Garlic Recipe

  1. Preheat oven to 400 degrees.
  2. Coat shallow baking dish (or cookie sheet) with cooking spray.
  3. Cut squash crosswise into rings 1/2 inch thick.
  4. Place the rings in baking dish in a single shallow layer, overlapping slightly.
  5. Brush with oilve oil.
  6. Bake for 15 minutes.
  7. Meanwhile, in a small bowl, toss garlic and pine nuts with remaining olive oil.
  8. Sprinkle pine nuts and garlic evenly over the squash rings and continue baking until pine nuts are lightly browned (or squash looks done), 10-15 min.
