Homemade Dashi Soy Sauce
- 2 tbsp sake
- 2 tbsp Mirin
- 4 tbsp soy sauce
- 1 tbsp dried bonito flakes (or to taste)
- In a small saucepan, bring the the sake, mirin, soy sauce, and bonito flakes to a low boil and then remove from heat.
- Let mixture sit in a covered saucepan over night.
- Strain the liquid through a sieve.
- Bottle and refrigerate.
- The dashi soy sauce will keep in the fridge for up to 2 weeks.
