Dinner Whole Meal Recipe

  1. In 5-6 qt pan over high heat, brown lamb, half at a time in extra virgin olive oil.
  2. Lift lamb from pan.
  3. Set aside.
  4. Lower heat to medium, add in onions.
  5. Stir till limp.
  6. Fold in lamb broth and tarragon.
  7. Bring to a boil then simmer, cover till lamb is very tender, 1 to 1 1/2 hrs.
  8. Add in artichokes, peas, asparagus and mint.
  9. Simmer about 10-15 min, fold in lemon juice to taste.
  10. Makes 8 c., 4-6 servings.
