3 Cheese Spinach Roll-Ups
- 8 fluted lasagna noodles
- 3 Tbsp. butter or margarine
- 1 red pepper, seeded and chopped
- 1/2 c. chopped onion
- 2 (10 oz.) pkg. frozen spinach, chopped, cooked, squeezed and briefly sauteed
- 2 c. shredded Mozzarella cheese
- 3/4 c. Ricotta cheese
- 3/4 c. Parmesan cheese
- 1 slightly beaten egg
- 1/2 stick butter or margarine
- 1/4 c. flour
- 1/8 tsp. pepper
- 1/2 tsp. salt
- 1 c. milk
- 1 c. half and half
- Preheat oven to 375u0b0.
- Cook noodles according to directions. Cool in cold water.
- Set aside.
- Saute red pepper and onion until tender in 3 tablespoons of butter.
- Combine spinach, pepper, onion, 1 1/2 cups Mozzarella cheese, Ricotta cheese, 1/2 cup Parmesan cheese and egg; set aside.
