Bistro Salad
- 6 cups torn boston lettuce
- 34 cup bacon bits
- 12 cup red onion, thinly sliced
- 4 hard-boiled eggs, chopped
- 12 lb fresh green beans, trimmed, blanched
- 1 cup crouton
- 13 cup balsamic vinaigrette
- Blanching the beans: Add to a large pot of boiling water; cook uncovered 3 minutes, drain and immediately plunge beans in bowl of ice water to stop the cooking process.
- Cool completely and drain, then pat dry.
- Cover plate with lettuce.
- Arrange remaining ingredients in rows over lettuce.
