Beef Stroganoff
- 1 lb. of stew, steak meat
- 2 cups sliced button
- baby bella mushrooms
- Salt to taste
- Pepper to taste
- 1 tbsp. olive oil
- 3 cups V8 juice
- 1/2 cup sour cream
- Egg noodles
- Heat pan over medium heat and sautee mushrooms ( not completely done, because they will continue to cook in the sauce) for a few minutes with olive oil.
- Set aside.
- Season meat with salt and pepper, and brown.
- Drain access fat.
- Add V8 juice and mushrooms and lots of pepper.
- Simmer for about 40 minutes, but the longer it simmers the yummier the sauce will be, and more tender the meat.
- Add sour cream for the last 15 minutes.
- Serve over egg noodles.
