Bandito 'hot & Spicy' Broccoli
- 2 lbs broccoli
- 12 teaspoon salt (optional)
- 1 teaspoon mrsdash lemon pepper
- 11 ounces newman's own salsa (mild, medium, or hot)
- 34 cup sour cream
- 1 12 cups grated cheddar cheese or 1 12 cups monterey jack cheese or 1 12 cups tillamook cheese
- Preheat the oven to 400F.
- Cut off and discard the tough lower ends of the broccoli stalks.
- Trim the individual florets into bite-sized pieces.
- Peel off the tough skin covering the main stalks and slice the stalks into bite-sized pieces.
- Steam the broccoli until just soft, 3-5 minutes.
- Drain and place immediately in a 9x9-inch baking dish.
- Sprinkle with salt and lemon pepper.
- Pour the salsa over the broccoli, dot with the sour cream, and cover with cheese.
- Bake for 8-10 minutes, or until the cheese is melted and bubbling.
