Oven Barbecued Chicken Breasts
- 4 lg. halves, chicken breasts
- 1/2 c. flour
- salt and pepper to taste
- 1/4 c. cooking oil
- 1/4 c. margarine
- 1 c. catsup
- 1/2 c. water
- 1/2 c. sherry wine
- 2 Tbsp. lemon juice
- 1/3 c. diced onions
- 2 Tbsp. brown sugar
- 2 Tbsp margarine
- 1 Tbsp worcestershire sauce
- Dredge chicken breasts in flour to which salt and pepper is added.
- Heat mixture of oil and margarine in skillet.
- Place chicken in the hot oil, turning to a light brown.
- Arrange pieces in a lightly greased baking dish.
- Blend and heat all ingredients for the sauce, pour over chicken.
- Cover and bake 325 for about 1 1/2 hour or until chicken is tender.
- Serves 4.
