Meatless Loaf Recipe
- 2 c. brown rice
- 1 1/2 c. (6 ounce.) grated Cheddar cheese
- 1 c. finely minced carrots
- 1/2 c. plain yogurt
- 4 Large eggs, beaten
- 1/4 c. minced green onion
- 2 tbsp. minced parsley
- Grease 8 x 4 inch loaf pan.
- Preheat oven to 350 degrees.
- Combine all ingredients till well mixed.
- Spoon into pan.
- Place pan in a large roasting pan in the oven and fill with water to 1 inch from the top of the loaf pan.
- Bake 1 hour or possibly till knife comes out clean.
- Serve as is or possibly with cheese sauce made with:
brown rice, cheddar cheese, carrots, plain yogurt, eggs, green onion, parsley
