Goma-Ae
- 8 oz dashi
- 4 oz ground sesame
- 1 oz miso
- 1/2 oz maple syrup
- 1/2 oz sesame oil
- 1/4 oz soy sauce
- 1-2 lb vegetables
- Mix all ingredients except the vegetables together.
- Dashi means stock.
- We use kelp stock.
- You can use instant dashi powder and water.
- Cut the vegetables into the sizes you like.
- And cook them: Drop the vegetable into boiling water for 30-40 seconds if it's green vegetable like spinach or kale, or longer until it gets soft if it's root vegetables.
- Strain the water carefully and drop the vegetable into cold water.
- Squeeze the extra water.
- Put the sauce on.
- We have used spinach, chard, kale, cirantro, celery, summer squash, green onion, beet tops, carrots and potatoes, broccoli, cauliflower...etc...etc.
- Works with most of the vegetable.
- The one on the picture has some fried sweet potato on it.
