Fresh Spinach And Paneer
- canola oil
- 1 pound paneer, cut into 3/4-inch cubes
- salt
- 2 medium onions, finely chopped
- 1-inch piece of ginger, peeled, then grated or finely chopped
- 5 cloves of garlic, crushed
- 1 fresh green chili, very finely chopped
- 14 ounces cherry tomatoes, halved
- 1 tablespoon tomato paste
- 1 1/2 teaspoons ground coriander
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon chili powder
- 1 pound fresh spinach leaves, washed
- Put 3 tablespoons of the oil into a lidded frying pan on a high heat.
- Lightly season the paneer cubes with salt and fry them in the pan, turning regularly until golden on each side.
- Watch out, as the paneer might spit; if it does, half cover it with a lid.
- Remove the paneer cubes using a slotted spoon and put them to one side on a paper towel.
