Apple and Gorgonzola Stuffed Pork Chops

  1. Butterfly (cut a deep slice into) each pork chop.
  2. Youll need that pocket when it comes time to stuff each chop.
  3. Then season them with the salt and pepper on both sides.
  4. Melt butter in a medium size pan over medium heat.
  5. While the butter is melting, dice the apples into small, bite sized chunks.
  6. Add apples and brown sugar to the butter and sautee for several minutes.
  7. Stir frequently, you dont the apples to get mushy!
  8. When you feel the apples are done, transfer them to a bowl and add the gorgonzola.
  9. Stuff each pork chop with a nice spoonful of the apple and gorgonzola mixture.
  10. Add the olive oil to the pan and heat over medium high.
  11. When the pan is back up to temperature, add the pork chops and cook thoroughly, roughly 4 minutes per side.
  12. I like to serve these with mashed potatoes and green beans.
