Apple Walnut Muffins With Flaxseed Recipe
- 1/4 c. flax seed
- 3/4 c. sifted unbleached flour
- 1 c. whole wheat flour
- 1/4 tsp lite salt
- 1/4 c. sugar
- 2 tsp baking pwdr
- 3 x egg whites
- 2 Tbsp. canola oil
- 3/4 c. plain soy lowfat milk
- 1/2 c. minced walnuts
- 1 lrg apple diced
- Pre-heat oven to 400F.
- Grind the flaxseed to a coarse pwdr in a blender or possibly coffee grinder.
- In a bowl, sift together the flour, salt, sugar and baking pwdr.
- Stir in the flaxseed pwdr.
- In a separate bowl, beat together the Large eggs with the oil and soymilk.
- Add in the liquid ingredients to the dry ingredients and combine with a few swift strokes.
- Stir the diced apples and the walnuts into the batter.
- Fill oiled muffin tins two-thirds full and bake for 20-25 min.
- Description: "Diced apple, soymilk, walnuts, and flaxseed.
- Makes 24 2-inch muffins"
