Apple Walnut Muffins With Flaxseed Recipe

  1. Pre-heat oven to 400F.
  2. Grind the flaxseed to a coarse pwdr in a blender or possibly coffee grinder.
  3. In a bowl, sift together the flour, salt, sugar and baking pwdr.
  4. Stir in the flaxseed pwdr.
  5. In a separate bowl, beat together the Large eggs with the oil and soymilk.
  6. Add in the liquid ingredients to the dry ingredients and combine with a few swift strokes.
  7. Stir the diced apples and the walnuts into the batter.
  8. Fill oiled muffin tins two-thirds full and bake for 20-25 min.
  9. Description: "Diced apple, soymilk, walnuts, and flaxseed.
  10. Makes 24 2-inch muffins"
