Orange and Cream Cheese Cupcakes
- 120 grams Cake flour
- 1 tsp Baking powder
- 10 grams Cocoa powder
- 1 Egg
- 60 grams Granulated sugar
- 40 grams Butter (unsalted)
- 60 ml Milk
- 80 grams Kraft Philadelphia Cream Cheese
- 40 grams Candied orange peel
- Sift together the ingredients.
- Bring the eggs to room temperature.
- Heat the oven to 180C.
- Briefly microwave the cream cheese to soften.
- Mix in the orange peel.
- Combine the butter and milk.
- Microwave for about 40 seconds to melt the butter.
- Microwave for longer if necessary.
- In a separate bowl, beat the eggs and add the sugar.
- Use a hand mixer to whip until pale and thick.
- Gradually stir the melted butter into the egg mixture a little at a time.
- Fold in the sifted ingredients with a rubber spatula.
- The batter is complete.
- Fill 6 muffin cups a little less than halfway.
- Spoon in balls of the filling from Step 2.
- Pour the remaining batter on top.
- Bake for 25 minutes at 180C.
