Orange and Cream Cheese Cupcakes

  1. Sift together the ingredients.
  2. Bring the eggs to room temperature.
  3. Heat the oven to 180C.
  4. Briefly microwave the cream cheese to soften.
  5. Mix in the orange peel.
  6. Combine the butter and milk.
  7. Microwave for about 40 seconds to melt the butter.
  8. Microwave for longer if necessary.
  9. In a separate bowl, beat the eggs and add the sugar.
  10. Use a hand mixer to whip until pale and thick.
  11. Gradually stir the melted butter into the egg mixture a little at a time.
  12. Fold in the sifted ingredients with a rubber spatula.
  13. The batter is complete.
  14. Fill 6 muffin cups a little less than halfway.
  15. Spoon in balls of the filling from Step 2.
  16. Pour the remaining batter on top.
  17. Bake for 25 minutes at 180C.
