Pasta with Tomatoes and Bread Crumbs
- 1/2 pounds Pasta
- 1 cup Fresh Bread Crumbs
- 1 Tablespoon Olive Oil
- 2 cloves Garlic
- 2 pints Cherry Or Grape Tomatoes (cut In Half Lengthwise)
- 1/2 cups Grated Parmesan
- First, make the bread crumbs.
- Tear a piece of bread into small pieces and toast at 350 degrees F for about five to ten minutes.
- Crumble the bread into crumbs.
- Next, heat up the water for your pasta.
- When it comes to a boil, add your pasta and cook as long as the package instructs.
- While that is boiling, cook the garlic in a medium saucepan in a little olive oil until just fragrant.
- Add your halved tomatoes to the pan and cook until they begin to release juice.
- Reserve a cup of pasta water.
- And then add the drained, cooked, pasta to the tomato mixture.
- Add the reserved pasta water to adjust the consistency of the sauce to your liking.
- Stir in the bread crumbs and the cheese just before serving.
