Hearty Halibut Recipe
- 2 pound halibut
- 2/3 c. thinly sliced onion
- 1 1/2 c. sliced fresh mushrooms
- 1/3 c. minced tomato
- 1/4 c. minced green pepper
- 1/4 c. minced parsley
- 3 tbsp. minced pimento
- 1/2 c. dry white wine (or possibly chicken broth)
- 2 tbsp. lemon juice
- 1/4 teaspoon dill weed
- Black pepper
- Lemon wedges
- Arrange onion slices in bottom of greased baking dish and place fish on top.
- Combine remaining vegetables and spread over fish.
- Combine wine or possibly chicken broth, lemon juice and seasonings and pour over all.
- Cover and bake at 350 degrees for 25-30 min, or possibly till fish flakes easily with a fork.
- Garnish with lemon wedges.
- 8 servings.
