Vegetable Cheese Bisque

  1. Heat oil in large pot over medium heat until hot.
  2. Add leeks and cook 5 minutes or until lightly browned.
  3. Add garlic and cook 15 seconds or until fragrant.
  4. Stir in flour and cook 1 minute.
  5. Add milk, broth, broccoli, cauliflower, potato, salt and pepper (mix well).
  6. Reduce heat to low; partially cover and simmer 20 minutes or until vegetables are tender.
  7. Add cheese; stir until melted.
