Moms Chicken and Rice Casserole
- 2 cans (10.75 Oz. Can) Cream Of Mushroom Or Cream Of Chicken Soup
- 2 cans Milk (just Use The Soup Can To Measure)
- 1 can (15 Oz. Can) Grean Beans Drained (or Any Other Veggie)
- 1 cup Cheddar Cheese, divided
- 1 cup French Fried Onions, Divided
- 1- 1/4 cup Dry Rice (I Use The Boil In Bag Type)
- 2 whole Chicken Breasts Cooked And Cubed
- In a large saucepan, mix soup, milk, green beans, 1/2 cup of cheese, 1/2 cup of fried onions and rice.
- Bring to a boil and then add chicken.
- Pour into a large casserole dish (at least 2-qt size) and cook in the microwave on high for 10 minutes.
- When finished cooking, sprinkle the remaining 1/2 cup cheese and 1/2 cup onions on the top, allowing cheese to melt before serving.
