Gluten Free Almond Cookies
- 8 ounces almond paste
- 1/2 cup sugar
- 2 each egg whites
- 1 x pignoli nuts optional
- Mix together first three ingredients.
- Take about 1 to 2 tablespoons and roll in pignoli nuts, if desired.
- Shape into either a ball or crescent.
- Bake about 10 to 15 minutes in a 350F (180C) oven on brown paper or a cookie sheet, no grease!

- When done slide the brown paper on a wet dishtowel which has been laid out flat on the counter, it must be wet not just damp.
- Within seconds your cookies will lift from the paper with a spatula.
