Crunchy Sweet Potatoes
- 3 medium sweet potatoes, halved lengthwise
- 1/4 cup (1/2 stick) butter or margarine, melted
- 1 cup multi-grain cereal, any variety
- 1/4 cup firmly packed brown sugar
- Preheat oven to 350F.
- Cut deep slits in rounded side of potatoes at 1-inch intervals, being careful not to cut all the way through potatoes.
- Place, slit sides up, in greased 13x9-inch baking pan.
- Brush tops with butter.
- Bake 40 minutes.
- Baste potatoes with butter from bottom of pan; sprinkle with cereal and sugar.
- Continue baking 10 minutes or until potatoes are tender and topping is golden brown.
