Crunchy Chicken Salad Cups (21 Day Wonder Diet: Day 8)
- 220 g chicken breast fillets
- cooking spray
- 12 cup low fat cottage cheese
- 3 celery ribs, trimmed and chopped
- 4 green onions, sliced thinly
- 2 teaspoons fresh dill, chopped coarsely
- 1 garlic clove, crushed
- 6 small iceberg lettuce leaves
- Spray chicken with cooking oil; cook chicken in heated small frying pan.
- Remove from heat; cool.
- Shred chicken coarsely; combine in medium bowl with cheese, celery, onion, dill, and garlic.
- Divide chicken mixture among lettuce leaves.
