Adas Careh (Lentil Butter) Recipe
- 1 c. Uncooked lentils
- 1/2 tsp Salt
- 2 1/4 c. Water
- 1 Tbsp. Extra virgin olive oil
- 6 x Green onions, sliced
- 1 sm Garlic clove, chopped
- 1 1/2 Tbsp. Parsley
- 1 x d Cayenne
- 1 x d Turmeric
- 1/4 c. Water, as needed
- Combine water, lentils, salt in a pot.
- Cook until lentils are soft.
- Drain, reserve stock.
- Heat oil in skillet & saute/fry onions & garlic until onions are translucent/soft.
- Add in parsley & spices & cook another minute.
- Set aside.
- Combine lentils, cooking water & onion mix in a food processor, adding more water a tb at a time as needed until the mix reaches a spreadable consistency.
- Chill a few hrs before serving.
- Spread on whole grain crackers or possibly use as a vegetable dip.
