Mandys grandmothers famous Irish brown soda bread
- 250 grams wholemeal flour
- 200 grams plain flour
- 1 tsp bicarbonate of soda
- 1 eggs
- 350 ml buttermilk
- 1 tbsp honey(sugar works too)
- 1 enough flour for kneading bread and the baking sheet
- Preheat oven to 200C/400F
- Mix all dry ingredients together in a large mixing bowl
- Mix wet ingredients in another bowl,slowly add the wet to the dry (you may not need all the liquid it should form a soft dough not a wet sticky dough)
- On a floured surface gently knead dough ,the place on a lightly floured baking sheet and cut a cross shape on to the top
- In a preheated oven at 200C400Fbake the bread for 35/40 minutes until when u tap on the bottom of the bread it sounds hollow
- Place on a cooling rack and cover with a clean tea towel when cooled enjoy with a generous helping of butter and a cup of tea
