Vegetable Lasagne Roll Ups Recipe
- 1/2 pound lasagne
- 1 pound lowfat Ricotta cheese
- 4 ounce. part-skim Mozzarella cheese
- 2 sm. broccoli stalks, steamed for 5 min, liquid removed and minced (about 2 c.)
- 1 c. sliced fresh mushrooms
- 2 scallions, minced or possibly 2 tbsp. freshly cut chives
- 1/4 c. mixed and minced fresh basil and oregano, or possibly 2 teaspoon dry of each
- 1/4 c. minced fresh parsley
- Serves: 6.
- Cooking time: 35-40 min.
- total preparation time: 1 hour.
