Black Bean Salad, Blue Cheese & Sunflower Seeds
- 8 cups chopped romaine lettuce
- 4 medium tomatoes, chopped
- 2 cups fresh broccoli florets
- 3 cups black beans cooked or canned without added salt
- 4 carrots, peeled and grated
- 1/4 cup
- 1/2 cup PLANTERS Sunflower Kernels
- 4 sesame breadsticks
- 4 fresh peaches
- 32 fl oz (4 cups) drinking water
- Place 2 cups lettuce on each plate.
- Mix tomatoes, broccoli, beans and carrots in a bowl.
- Toss with dressing.
- Top each plate with 1/4 of the vegetable mixture.
- Sprinkle each salad with 1 Tbsp.
- sunflower kernels and enjoy with 1 breadstick on the side.
- Complement meal with 1 peach per person.
- Serve an 8 fl oz glass of water per serving with the meal.
