Black Bean Salad, Blue Cheese & Sunflower Seeds

  1. Place 2 cups lettuce on each plate.
  2. Mix tomatoes, broccoli, beans and carrots in a bowl.
  3. Toss with dressing.
  4. Top each plate with 1/4 of the vegetable mixture.
  5. Sprinkle each salad with 1 Tbsp.
  6. sunflower kernels and enjoy with 1 breadstick on the side.
  7. Complement meal with 1 peach per person.
  8. Serve an 8 fl oz glass of water per serving with the meal.
