Kale Salad with Mango Vinaigrette

  1. Combine the mango, garlic, cilantro, vinegar and agave in a bowl.
  2. Sprinkle with salt and pepper.
  3. Whisk in the olive oil.
  4. Taste and adjust the seasoning as needed.
  5. Add the kale to the dressing and toss to coat.
  6. Set aside for 20 minutes before serving to allow the kale time to soften.
