BBQ Chicken Salad with Peppers
- 2 pieces Leftover Grilled/BBQ Chicken
- 1/2 whole Yellow Or White Onion
- 1/2 whole Green Or Red Or Both Pepper
- 1/2 cups Mayonnaise (I Love Hellman's)
- 2 teaspoons Paprika
- 1 teaspoon Pepper
- 1 teaspoon Salt
- 1 whole Leftover Corn On Cob (corn Removed From The Cob; Optional Ingredient)
- Take leftover chicken, remove it from the bone (if it has bones in it) and chop it up pretty good, or pretty rough, depending on how you like your chicken salad.
- Do the same thing with the onion and peppers.
- Throw the chicken, onion and peppers in a bowl with the remaining ingredients and mix well.
- Eat on crackers, sandwiches, as a dip at parties....
- No one will know they are eating leftovers!
- The paprika just gives it that extra smoky flavor!
- Not to mention the smokiness of the chicken already!
- If you are feeling fancy and want a little something extra you can throw some corn in there for a bit of sweetness.
- Since leftovers arent a specific measurement, I just went with what I would do if I had two breast pieces leftover.
- Feel free to add more or less of anything as you see fit.
